The Ultimate delicious Mexican cake ever!! My family and friends love this one for me to make! I got this recipe from Tina at Married To A Mexican { http://marriedtoamexican.com/ }
  • 3 cups sifted all purpose flour
  • 2 cups white granulated sugar
  • Tsp baking powder
  • Tsp salt
  • ½ tsp baking soda
  • 1½ cups Mexican crema
  • 2 cubes butter
  • 4 eggs
  • 2tsp vanilla
  • 2 cups heavy whipping cream or 1 cup of milk. Since I use Lactaid Low fat, it works well with this recipe.
  • 1 can evaporated milk
  • 1 can condensed milk
  • 4 cups heavy whipping cream
  • 1 cup powdered sugar
  • ⅓ of frosting cream
  • 1 small package instant vanilla pudding
  • 1 cup store bought strawberry jam
  1. In your mixing bowl, add your purpose flour, sugar, baking powder, salt baking soda, Mexican Creama, add in your butter. Blend together. Then add your eggs and vanilla and blend for about 3 minutes.
  2. Spray your pans. You can use a baking dish 13×9 or 2 inch pans. Just depends how many layers of cake you want to make. U can make cupcakes of this too! Place your baking pans in the oven with the temp at 350 and bake your cake for 35-40 minutes. Insert a tooth pic to check if it’s done. Once your tooth pic comes out clean your cakes are done.
  3. For the frosting. It’s recommend to have your mixer bowl chilled in the freezer. Its makes a really good whipping cream. Use a whole quart of heavy whipping cream and pour in the mixing bowl. When mixing the whipping cream, you have to keep a very good close eye at it, because if you don’t it will turn into butter!! Don’t want that! Once you think the whipping cream is getting slightly thick, add in your 1 cup of sugar. And let it blend. Once done mix slightly with your spatula. When lifting your spatula out of the bowl, the whipping cream should be staying on your spatula. If so, it is nicely whipped! So take a 3rd of that whipping cream and save it.
  4. For the filling. In another bowl, mix in your small package of instant vanilla pudding and gently fold it in with the whipping cream. Add in the strawberry jam. Mix in gently.
  5. For the 3 Milks (Leche) Mixture. Mix together the Milk, Condensed Milk and Evaporated Milk. Set aside.
  6. Once your cake(s) are done. It is VERY important to poke holes through out the cake(s). I use a fork and just poke gently all around. Then slowly and gently pour in the 3 Milks(leche) into your cake. I start from the middle in circular motion to the outter edge. Go slowly until you think your cake is nicely moist and wet. Don’t want to drench it.
  7. On top of the cake add in your cake filling. Add the 2nd layer of cake and repeat the process and gently poke holes in your cake. Add in your 3milks(leche) mixture slowly!. Once that is all done, now it’s time to frost your cake!!
