Ingredients
- 3 Large eggs
- 3/4 cup of white sugar
- 1/3 cup of fresh lemon juice (do not use bottled lemon juice)
- 4 Tablespoons of unsalted butter at room temperature
- 1 Tablespoon of lemon zest
Instructions
- Beat the 3 large eggs, add sugar and lemon juice and mix well. In a double boiler, you will need to mix this for about 3-4 minutes constantly! Do not leave the mixture unattended. You have to stay at the stove stirring the curd until it becomes thick like sour cream or hollandaise sauce. Take it out of the double boiler and add your butter and lemon zest. Cover well, so a skin doesn’t form.
